Cacao, avocado and chia mousse pot

Today has been one of those days… Someone didn’t get home till pretty late, so I was up unnecessarily worrying. Then my other little someone is teething and was waking up what felt like every 20 minutes.
Feeling groggy, tired and sorry for myself I needed something to distract me and satisfy my sweet tooth so I had a scour of my raw recipe online ‘pins’ and found a recipe where I had all the ingredients already in… Food shopping is not happening today.

These raw, vegan pots needed no preparation or overnight soaking. Literally put everything in the blender or food processor (or I used my hand blender as it’s quite solid and needed a bit of extra mushing) and makes a delicious mousse like paste.

Ingredients:

2 very ripe avocados
1/3 cup maple syrup (or any healthy sweetener eg. Date syrup, raw honey or raw coconut nectar)
1/3 cup raw cacao powder
3 tablespoons coconut oil
1 teaspoon vanilla extract
1 tablespoon chia seeds

Then you can sprinkle whatever you wish on top. I used raw cacao nibs and ground almonds.

Once everything is blended, place in ramekins, small glass jars or bowls. Put on your choice of toppings. Then place in the fridge for at least 30 minutes. This will give the chia seeds the chance to soak in the mixture and the ingredients to set and solidify a bit.

Try to use organic produce where possible so that these little pots are only filled with the nutrients you need.

My aim was to save and have a treat as I’m staying in on my Saturday night (as usual). But I couldn’t leave them in the fridge all afternoon… As soon as half an hour was up and the puddings had set I demolished the whole lot. Well mini Pearl was napping, so what else was I supposed to do!?

    1. Hi thefruitbowlkid, yeah I has tried a cake at the raw cafe Inspiral lounge in London that was made with avocado and it inspired me to try it at home… So glad I did, it works really well 🙂
